Directions: To prepare crust, combine bread crumbs, Parmesan cheese,
horseradish, oil and seasonings; mix well and set aside. To make
Dijon cream, cook cream over low heat until reduced to approximately
3/4 cup. Stir in mustard and season with salt and white pepper.
Pat 1/2 cup seasoned crumb mixture on each salmon filet to completely
cover top. Roast crusted filets in 400 degree oven for 15 to 18
minutes or until cooked through. Serve each filet with 2 Tbl. Dijon
cream.
